mashed potatoes are akin to crack for me. i was thinking about them on my drive home from work yesterday and my car automatically drove to the grocery store so i could ’score’ some yukon golds and HALF AND HALF.
yes, i’m such a sinner that i make my mashies with half and half instead of whole, 2% or skim milk. can anyone else hear my arteries hardening, or is it just me?
and i was thinking about eating the leftovers for breakfast, but decided even i couldn’t stoop so low–i’ll hold off until lunch.

In Ireland we used to eat ‘champ’, which is a mixture of mashed potatoes, milk, butter, and ‘chives’ (or scallions).
A meal in itself!
I used to make mashed potatoes with Cardini’s caesar salad dressing. MAN they were the bomb.
